ITS HUNTING SEASON

At this time of year, the hills are full of hunters combing the hills and forests looking for cinghiale, or wild boar. The animal proliferates at an awesome rate and is responsible for damage to crops and property. Without control the animal's population on the local economy and livelihood would be much worse. The meat makes for hearty sauces or main dishes throughout Italy.

On this particular Sunday, we were shown the sportsman's trophy of a 90kg adult freshly killed. Gruesome and unsightly. It's hard to translate this into an appetizing meal. While not a hunter, I know the destructive nature of these animals and prefer to imagine the dinner part over everything else.
